Loaded Nachos Recipe

Ingredients
  

  • 1 16 oz Tortilla Chips I like the Xochitl brand because they are light and thin
  • 2 lbs Ground Beef Can sub in ground turkey, or shredded chicken, beef, or pulled pork.
  • 3 tbsp Taco Seasoning (Homemade) or your favorite Taco Seasoning Packet
  • 1/4 cup Water Only if using homemade seasoning.
  • 8 oz Shredded Cheddar or Mexican Cheese Can use more if desired.
  • 1-2 15 oz Red or Black Beans, canned Rinse and drain
  • 1 15.5 oz Jar of Salsa Use desired heat level
  • 3-4 Green onions, sliced
  • 1 Head Lettuce Shredded Red leaf, green leaf, or romaine
  • 1-2 Tomatoes, chopped
  • 2 Avocados diced Can sub in guacamole
  • 2 tbsp Fresh cilantro or parsley, chopped
  • 1 8 oz Sour Cream (Optional)
  • 1-2 Jalapeños, sliced (Optional)
  • 8 oz Sliced Black Olives (Optional)

Instructions
 

  • Pre-heat oven to 400°F, then line a baking sheet with parchment paper. Set Aside.
  • Brown the ground beef until no longer pink, add taco seasoning and water (if using a homemade mix). Alternately follow the directions on the taco seasoning packet.
  • While the ground beef is cooking, chop the tomatoes, onions, cilantro, avocados, jalapeños, and shred the lettuce.
  • Grab the baking sheet and add a light layer of the tortilla chips.
  • Top tortilla chips lightly with cheese, some ground beef, some beans, and a bit of salsa.
  • Continue to layer chips, cheese, beef, beans, salsa until you run out of meat and beans. Then top final layer with tortillas and cheese.
  • Bake for 10 minutes or until the cheese is melted.
  • Top with the tomatoes, onions, cilantro, avocados, lettuce, etc.
  • You can dollop sour cream, guacamole on top of the veggies or serve it on the side.

Notes

To reduce quantities 1lb of ground beef will feed approximately 3-4 people.
I use a homemade taco seasoning mix and add 1/4 cup of water to the mixture. However, if you have a favorite taco seasoning that you use follow the pkg directions.
You can increase the amount of cheese if you love lots of melted cheese.
