Loaded Nachos Recipe

Easy to make loaded nachos recipe that is perfect for entertaining a group of friends, family or perfect for game day celebrations.

Many years ago I ventured into a sports bar with my family and ordered their nacho dinner special. Once it arrived and I started to eat it I realized that I could easily make different versions of it at home. Not only would it feed my family but what a great idea for celebrations like the Super Bowl, World Cup, World Series, etc. Obviously if you put these nachos on the table for any game day event they would be a hit.

Fast forward a few years and now I served them to my kids and their friends during birthdays, or casual get togethers. Because I keep them on the mild side they are loved by all.

Loaded Nachos Ingredients

Tortilla Chips – Use your favorite tortilla chip, I like to use a lighter thinner chip like these Xochitl Mexican Style Tortilla Chips.

Ground Beef – You can substitute ground turkey, chicken or even, pulled chicken, beef or pork.

Taco Seasoning – Use your favorite taco seasoning cooked to package directions. If it seems a bit dry add a bit of water to the meat.

Onions – Green onions (scallions) work best here because of their mild flavor.

Tomatoes – A few chopped tomatoes adds a nice flavor and freshness to the dish.

Lettuce – Use your favorite lettuce, some good varieties are red leaf, green leaf, or romaine.

Cheese – Shredded Mexican Style, Cheddar, or Monterey Jack cheese melt nicely into the tortilla chips.

Beans – Black or Red Beans are preferred. Make sure to rinse and drain them before using.

Salsa – Use your favorite store bought or homemade salsa in whatever spice level you love.

Cilantro/Parsley – Not everyone loves cilantro but it does have nice flavor, if you’re not a fan parsley works well here.

Avocados/Guacamole – Chopped avocados are great for sprinkling on top. However, homemade or store bought guacamole is also a great addition to be served on the side or dolloped on top of the nachos once they are baked.

Sour Cream – This is optional but also a nice addition, can be served on the side.

Jalapeños – Sliced jalapeños if you like it spicy or can be served on the side for those who do.

How To Make Loaded Nachos

Begin by making your meat following the taco seasoning directions, or alternatively use your own taco seasoning mix. Make sure that the meat has a little bit of juice once fully cooked. You can simply add a bit of water if needed.

Line a large sheet pan or tray that can go into the oven with parchment paper (easy cleanup and the cheese won’t get stuck to it). Then place a light layer of tortilla chips on top of the parchment. Begin to lightly layer the cheese, then the ground beef, some of the beans followed by some salsa. Add another layer of tortillas and repeat layering until you run out of meat and beans. Add a top layer of tortilla chips and top with the cheese, bake in the oven for about 10 minutes or until the cheese is melted.

Once the nachos come out of the oven top with chopped tomatoes, shredded lettuce, sliced green onions, avocados/guacamole, cilantro, sour cream, and jalapeños if using.

Materials

  • 1 16 oz Tortilla Chips I like the Xochitl brand because they are light and thin
  • 2 lbs Ground Beef Can sub in ground turkey, or shredded chicken, beef, or pulled pork.
  • 1-2 15 oz Red or Black Beans, canned Rinse and drain
  • 1 15.5 oz Jar of Salsa Use desired heat level
  • 3-4 Green onions, sliced
  • 1 Head Lettuce Shredded Red leaf, green leaf, or romaine
  • 1-2 Tomatoes, chopped
  • 2 Avocados diced Can sub in guacamole
  • 2 tbsp Fresh cilantro or parsley, chopped
  • 1 8 oz Sour Cream (Optional)
  • 1-2 Jalapeños, sliced (Optional)
  • 8 oz Sliced Black Olives (Optional)

Instructions

  • Pre-heat oven to 400°F, then line a baking sheet with parchment paper. Set Aside.
  • Brown the ground beef until no longer pink, add taco seasoning and cook to package directions.
  • While the ground beef is cooking, chop the tomatoes, onions, cilantro, avocados, jalapeños, and shred the lettuce.
  • Grab the baking sheet and add a light layer of the tortilla chips.
  • Top tortilla chips lightly with cheese, some ground beef, some beans, and a bit of salsa.
  • Continue to layer chips, cheese, beef, beans, salsa until you run out of meat and beans. Then top final layer with tortillas and cheese.
  • Bake for 10 minutes or until the cheese is melted.
  • Top with the tomatoes, onions, cilantro, avocados, lettuce, etc.
  • You can dollop sour cream, guacamole on top of the veggies or serve it on the side.

Notes

To reduce quantities 1lb of ground beef will feed approximately 3-4 people.
