Maple Roasted Carrots

A few simple ingredients make these maple roasted carrots a great side dish.

Materials

  • 2 lbs Whole carrots, scrubbed and peeled. can leave peel on if desired.
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Maple Syrup, plus 1 tbsp for drizzling
  • 1/4 tsp Fresh Thyme, plus 1/2 tsp to sprinkle at the end.

Instructions

  • Pre-heat oven to 400°F. Add parchment paper to a baking sheet and set aside.
  • Scrub and and peel carrots and trim the ends. If the carrots are large slice them down the middle lengthwise so they are more uniform with the other carrots for even roasting.
  • Place the carrots on the baking sheet and top with the olive oil, salt, pepper, maple syrup and fresh thyme.
  • Mix it all together ensuring the carrots are evenly coated.
  • Roast for 15 minutes then flip the carrots, they may start to char a bit and that's ok.
  • Continue to cook another 15 - 20 minutes or until fork tender.
  • Place on a platter, drizzle a tbsp of maple syrup over the top and sprinkle with more fresh thyme.

Notes

Store leftovers in the refrigerator up to 2 days.
