Ingredients

Carrots – You can choose to peel them or not, just trim the ends off

Salt – Regular table salt

Black Pepper

Olive Oil – Use a light olive oil

Maple Syrup – Use pure maple syrup

Fresh Thyme

Instructions

  1. Pre-heat the oven to 400°F.
  2. Place parchment paper onto a baking sheet, to prevent the carrots from sticking to the baking sheet.
  3. Wash, scrub, peel (optional), and trim the ends of the carrots and place them in a large bowl. If the carrots are large slice them down the middle lengthwise to make them more uniform in size for even roasting.
  4. Add the olive oil, salt, pepper, maple syrup, and fresh thyme to the bowl of carrots.
  5. Mix then evenly place on a baking sheet.
  6. Roast for 15 minutes then flip them. The ends may char a little bit and that’s ok.
  7. Roast for an additional 10-15 minutes or until the carrots are tender.
  8. Place on a serving platter and drizzle another tablespoon of maple syrup over top the carrots and sprinkle with some fresh thyme.

We added these carrots as a side for our Christmas dinner and they were the perfect addition! They were the perfect contrast of sweetness to our other vegetable sides and they were the first item to be completely eaten. Excited to add these into the regular rotation!
