We all know and love loaded nachos. These loaded waffle fries are a nice change using waffle fries as the base. You can be as elaborate as you want on the toppings. Some favorites are a delicious cheese sauce, seasoned ground beef, tomatoes, lettuce, avocado, onions, etc. If you are interested in more traditional nachos then this Loaded Nachos Recipe is perfect for you.

Ingredients
Ground Beef – Use a ground beef that has a little bit of fat in it for more flavor
Taco Seasoning – Use your favorite homemade or store bought taco seasoning
Water – For the seasoned ground beef mixture
Waffle Fries – Use your favorite brand of frozen waffle fries
Cheese Sauce – You can use a regular or spicy cheese sauce. A current favorite is this Drippy Dip Salsa Con Queso.
Tomato – Regular or cherry tomatoes
Avocado – One diced avocado
Green Onions – You will need 2 green onions/scallions sliced both white and green parts
Parsley – Fresh minced parsley
Lettuce (Optional) – Iceberg lettuce would work best.
Salsa (Optional) – Use your favorite salsa

Instructions
Pre-heat the oven to waffle fries package directions.
Using half the package of waffle fries, lay them onto a parchment lined baking sheet and cook according to the package directions.
Brown the ground beef in a medium-high skillet until no longer pink, drain any fat, then add the taco seasoning packet and follow the packet directions, adding water as needed.
Cut the cherry tomatoes in half.
Dice the avocado.
Mince the parsley and chives if using.
Once the waffle fries are crispy top them with the cooked seasoned ground beef.

Add the salsa con queso to a small bowl and gently warm in the microwave until a bit runny then drizzle it over the ground beef.

Add the cherry tomatoes, green onions, lettuce, salsa, and the diced avocado on top of the ground beef.

Sprinkle with the parsley, chives and sea salt flakes if using.

- 1 lb 75% Lean Ground Beef – US Wellness Meats
- 1 Taco Seasoning use your favorite
- 1/4 cup Salsa Con Queso Cheese Dip – Drippy Dip or regular cheese dip
- 1 Avocado, diced
- 6 oz Tomato, cherry cut in half
- 22 oz Waffles Fries use 1/2 bag
- 2 Green Onion use white and green parts
- 1 Tbsp Parsley Flat Leaf, minced
- Lettuce, shredded (optional)
- 1/2 tsp Chives, minced (optional)
- 1/2 tsp Maldon Sea Salt Flakes (optional)
