This cozy apple cinnamon oatmeal bowl is the perfect high fiber breakfast. The apples are cooked with brown sugar and spices until they are tender and delicious. The oatmeal itself is easily made following package directions. This healthy breakfast not only satisfies a sweet tooth but also helps in reaching your fiber goals. Making a batch of the apples ahead of time ensures a faster breakfast on mornings where you have a bit of time to linger but it’s still easy to put together. Ingredients

Apples – You will need approximately 1lb of apples; honeycrisp or gala work well here

Water – To cook the apples and also to cook the oatmeal

Salt – Just a pinch of fine salt

Cinnamon – You can use cinnamon or apple pie spice

Light Brown Sugar – For sweetness, dark brown or regular granulated sugar can also be used

Oatmeal – Make as many servings as you need following package directions

Maple Syrup – Adds another layer of sweetness and flavor

Milk/Creamer (Optional) – For topping the oatmeal

Raisins (Optional)

Almonds (Optional) – Toasted almonds, whether sliced or slivered add a nice crunch to the oatmeal bowl

Instructions

Chop the apples into bite size pieces then add them to a medium size skillet.

Add 3/4 cups of water, a pinch of the salt, 2 tbsp of the light brown sugar, and 1 tbsp of cinnamon. Mix until combine.

Over medium heat cook the apples until they are fork tender but they still have a bit of bite to them about 10-12 minutes. You don’t want them to mushy. If needed you can add a little bit more water to the apples to help them cook.

Taste and adjust the flavors adding more brown sugar or cinnamon if needed.

Stir in the 1 tbsp of maple syrup and cook for a few more minutes for the flavors to combine.

Once the apples are cooked set them aside and make the oatmeal, or alternatively place them into a bowl, cool, and refrigerate until ready for use.

Make the oatmeal according to package directions and the amount of serving you would like.

Once the oatmeal is finished cooking, remove from the pot and top with the warm apples and any additional toppings such as milk, raisins, almonds, etc.

If you are taking the apples from the refrigerator, once the oatmeal is just about done, stir in the desired amount of apples into the oatmeal to warm gently before serving.

Recipe Tips
  • This makes a nice amount of apples to either serve to a group or for individual servings
  • You can use apple pie or pumpkin pie spice in place of the cinnamon
  • Cook the oatmeal once the apples are cooked so you don’t have cold oatmeal when serving
  • If the apples were refrigerated warm them in the cooked oatmeal on the stovetop before serving
  • You may need to add a bit more water to the apples if they become dry. Ideally you should have a small amount of liquid left once the apples are cooked.
  • Oatmeal should be made right before serving but apples can be made and stored in the refrigerator ahead of time.
