When I’m looking to change up my cookie dessert but still want all the chocolate I make these. Filled with chocolate chips and a rich chocolate flavor it hits all your craving spots. I have a few chocolate lovers in my home and they love these.

Simple Ingredients

You probably have all the ingredients on hand to make these cookies. This is the type of cookie you can make anytime because the ingredients are everyday ingredients like:

Cocoa Powder                Brown Sugar

Baking Soda                   Butter

Salt                                 Vanilla Extract  

Eggs                               Chocolate Chips

If your feeling extra and you have a Trader Joe’s nearby grab some of their pound plus dark and milk chocolate and chop them up in place of regular chocolate chips, it does add a bit of prep time but it’s so worth the effort. The chunks will be bigger and the chocolate shards from cutting the bars adds another layer of yum.

Serving Suggestions

 These cookies would make a great option for mini cookie ice cream sandwiches filled with your favorite ice cream. You can also crumble them into homemade ice cream. If you’re not into making your own ice cream they could be crumbled onto your favorite store bough ice cream as well.

Gluten-Free Double Chocolate Chip Cookies

Materials

  • 2 1/4 cups Gluten-Free Flour
  • 1 tsp Xanthan Gum If gluten-free flour doesn't have it in the mix.
  • 1/2 cup Baking Cocoa
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Butter
  • 1 cup Brown Sugar
  • 3/4 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 2 Large, Eggs
  • 2 cups Semi-Sweet Chocolate Chips
  • Flaky Sea Salt Optional

Instructions

  • Pre-heat oven to 375°f
  • In a small bowl combine the flour, cocoa, baking soda and salt.
  • In a mixer bowl, beat the butter, brown sugar, granulated sugar, and vanilla until creamy.
  • Beat in the eggs until light and fluffy, about 2 minutes.
  • Gradually beat in the flour mixture.
  • Stir in the chocolate chips.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake 8-10 minutes or until puffed.
  • Cool for 2 minutes then transfer to wire racks to cool completely.
  • Sprinkle lightly with flaky sea salt if desired.

Notes

Can be made using regular flour.
To freeze: scoop dough into individual cookies onto a parchment lined baking sheet. Freeze for an hour or more, remove and store in a freezer bag until ready to use.
To bake from frozen: No need to thaw just lay cookies on cookie sheet and bake as usual. They may need an additional 1-2 minute bake time.
