Chocolate Chip Skillet Cookie – Gluten-Free

Delicious and easily make in one skillet, this chocolate chip skillet cookie comes together quickly and will be a family favorite.

This chocolate chip cookie is easily made in one skillet, and is gluten-free to boot. I love that it comes together quickly and can be dessert any night of the week. Ingredients

  • Butter – I like to use unsalted butter, however you can use salted
  • Sugar – Regular granulated sugar
  • Light Brown Sugar
  • Pure Vanilla Extract – For flavor
  • Egg – One large egg
  • Gluten-free/Regular Flour – I like to make sure the gluten-free flour has xanthan gum in it
  • Sea Salt – Use fine sea salt or regular table salt
  • Dark Chocolate Chips – Use your favorite brand
  • Milk Chocolate Chips – You can use milk or semi-sweet chocolate chips
  • Marshmallows ( Optional ) – Mini marshmallows

Instructions

1. Pre-heat the oven to 350ยฐF.

2. Melt the 1/2 stick of butter in a 10-inch skillet. You can brown the butter if desired.

3. Add the white and brown sugar and mix to combine.

4. Remove the skillet from the stovetop and let the mixture cook 5-10 minutes (this way you won’t have scrambled eggs when you add the egg).

5. In a small bowl add the egg and beat it, then slowly add a bit of the butter/sugar mixture to the egg and mix well to warm the egg.

6. Add the egg and vanilla extract to the skillet and mix well.

7. Add the flour, baking powder, and salt to the skillet and mix until the flour is fully incorporated into the mixture.

8. Add the chocolate chips and marshmallows (if using) stir to combine. Its ok if some f the chocolate chips begin to melt.

9. Spread the mixture out evenly in the skillet and top with a small handful of chocolate chips.

10. Bake for 15-20 minutes or until browned and cooked through.

11. Once cooled, slice the cookie into pie shaped wedges or squares.

Marshmallows are optional but using different chocolate chip combos (milk/dark/semi-sweet) gives it more depth of flavor.

You can make this in a regular or cast iron skillet.

  • Add the chocolate chips and marshmallows (if using) stir to combine. Its ok if some of the chocolate chips begin to melt.

  • Bake for 15-20 minutes until browned and cooked through.
  • Once cooled slice into pie shaped wedges or squares.

Notes

You can use a combination of chocolate chips or use all one kind (ie. all dark or semi-sweet, etc.)
You can also add 1/2 cup of mini marshmallows if desired.
Let the butter/sugar mixture cool a bit then add some to the egg to warm it up (this is called tempering and prevents the egg from becoming scrambled if the mixture is too hot).
