A taste of summer in every bite of this ricotta tomato basil toast with balsamic drizzle.

I realized not too long ago that I’m a toast lover. I love topping my toast with various toppings for a delicious breakfast or even lunch option. A current favorite is this Savory Prosciutto & Avocado Toast.

Ingredients
Bread – Use your favorite sourdough bread. I am using Schar Gluten-Free Sourdough Bread for this recipe.
Ricotta Cheese – Use your favorite brand
Tomatoes – You will need 1 ripe tomato cut into 2 thick slices
Extra Virgin Olive Oil – A good quality extra virgin olive oil is recommended
Balsamic Vinegar – Use your favorite brand
Basil – Fresh basil cut into slivers (chiffonade)
Salt – Sea salt flakes work great if you have them on hand. If not, you can use fine sea salt.
Black Pepper – Fresh ground black pepper

Instructions
- Toast the bread in a toaster or if the slice is too large toast both sides in a dry skillet on medium heat.
- Add 1/4 cup of ricotta cheese to the top of the toast and spread into an even layer.

3. Slice 2 thick slices of tomato and place them onto the top of the ricotta cheese.

4. Roll the basil leaves then cut them into long thin strips (chiffonade).
5. Drizzle the tomatoes with the extra virgin olive oil, balsamic vinegar, then top with the fresh basil strips, salt, and fresh black pepper.


Ricotta Tomato Basil Toast with Balsamic Drizzle
Ingredients
- 1 Sourdough Bread, sliced Use gluten-free if needed
- 1/4 cup Ricotta Cheese
- 1 Tomato, slices (2-3) Slice them thick
- 1 tbsp Extra Virgin Olive Oil
- 1 Basil Leaf, fresh
- 1/2 tsp Balsamic Vinegar
- 1 pinch Sea Salt Flakes
- 1 pinch Black Pepper
Instructions
- Toast the bread in a toaster, or if it's too large toast both sides on medium heat in a dry skillet.
- Once the bread is toasted, spread 1/4 cup of the ricotta cheese onto the bread in an even layer.
- Top with the tomato slices.
- Roll the basil leaf into a small log then slice it into long thin strips (chiffonade), then set it aside.
- Drizzle the extra virgin olive oil, and balsamic vinegar over the tomatoes, then sprinkle the top with the fresh basil.
- Top with a sprinkle of salt and fresh ground pepper.
