Roasted Asparagus with Parmesan

These roasted asparagus with parmesan is the perfect side dish, whether it’s for a weeknight meal or a holiday table.

I love asparagus and this dish is so easy to make with a short list of ingredients and minimal prep time. It’s the perfect compliment to a holiday dinner but also goes great as a weeknight side dish. My other favorite asparagus recipe is this pasta with roasted tomatoes and asparagus.

Ingredients

  • Asparagus – You will need 1 lb, try to find the ones that are not to thick
  • Extra Virgin Olive Oil – Use your favorite brand
  • Salt – Fine sea salt
  • Black Pepper – Fresh ground black pepper gives the best flavor
  • Garlic Powder – For an extra flavor boost
  • Butter – Salted butter is preferred but you can use unsalted butter if that’s all you have
  • Parmesan Cheese – Use fresh grated parmesan cheese for the best flavor

Instructions

  1. Pre-heat the oven to 400°F and line a baking sheet with parchment paper.

2. Trim the ends off the asparagus and place them onto the parchment paper in an even layer.

    3. Drizzle the asparagus with olive oil then sprinkle the salt, black pepper and garlic powder over them. Toss them to coat, then make sure they are in an even layer.

    4. Cut the butter into small cubes and scatter them over the asparagus, then sprinkle the asparagus with the parmesan cheese.

    5. Bake for 10-15 minutes or until the asparagus is fork tender.

    6. Remove from the baking sheet and sprinkle any browned crispy cheese bits that are left on the parchment paper onto the top of the asparagus.

    7. Serve as is or with a squish of lemon.

    Recipe Tips
    • Baking times will vary depending on the thickness of the asparagus. A thinner asparagus will require less baking time.
    • You can sprinkle some lemon juice over the asparagus for more flavor if desired (optional)
